Trim Healthy Mama Black Bean Chicken Quesadillas

These flavorful Black Bean Chicken Quesadillas are a perfect E meal on the Trim Healthy Mama plan.
  • 1 can black beans, drained and rinsed - or about 1 1/2 cups cooked black beans
  • 1 large can chicken breast meat, drained - or about 1 cup cooked chicken breast, chopped
  • Low carb whole wheat tortillas
  • Light Laughing Cow Cheese - we like the chipotle flavor for this recipe
Additional seasoning, according to your family's taste - we like
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • several large pinches of fresh cilantro
